Description

A quick and easy breakfast dish with eggs, cheese, and salsa verde folded into a crispy tortilla.


Ingredients

  • 2 large eggs
  • 1/4 cup shredded cheese
  • 2 tbsp salsa verde
  • 1 large flour tortilla
  • 1 tsp butter or oil
  • Salt and pepper to taste

Instructions

  1. Heat butter or oil in a pan over medium heat.
  2. Whisk eggs with salt and pepper, then pour into the pan.
  3. Scramble the eggs until just set, then remove from the pan.
  4. Place the tortilla in the same pan and spread salsa verde on one half.
  5. Add scrambled eggs and shredded cheese on top of the salsa.
  6. Fold the tortilla in half and cook for 1-2 minutes per side until crispy.
  7. Slice and serve hot.
