Ingredients

- 4 medium russet potatoes
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup shredded cheddar cheese
- 4 slices cooked bacon, crumbled
- 2 tbsp chopped green onions
- 2 tbsp sour cream
Instructions
- Preheat oven to 400°F (200°C).
- Scrub potatoes clean and pierce with a fork.
- Bake potatoes for 45-50 minutes until tender.
- Cut potatoes in half lengthwise and scoop out flesh, leaving 1/4-inch shell.
- Brush skins with olive oil and season with salt and pepper.
- Return to oven for 10 minutes until crispy.
- Sprinkle cheese and bacon into each shell.
- Bake for 3-5 minutes until cheese melts.
- Top with green onions and sour cream.
Notes
- Save scooped potato for mashed potatoes or hash browns.
- For crispier skins, bake an extra 5 minutes.
- Substitute turkey bacon if preferred.
