A kid-friendly black bean and sweet potato chili that’s hearty, nutritious, and easy to make.
Ingredients

- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 sweet potato, peeled and diced
- 1 bell pepper, diced
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (14.5 oz) diced tomatoes
- 1 cup vegetable broth
- 1 tsp chili powder
- 1/2 tsp cumin
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic, sauté for 2 minutes.
- Stir in sweet potato and bell pepper, cook for 5 minutes.
- Add black beans, diced tomatoes, vegetable broth, and spices.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Season with salt and pepper before serving.
Notes
- For a milder taste, reduce chili powder.
- Top with shredded cheese or avocado if desired.
- Serve with cornbread or rice.
