Ingredients

  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 sweet potato, peeled and diced
  • 1 bell pepper, diced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup vegetable broth
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, sauté for 2 minutes.
  3. Stir in sweet potato and bell pepper, cook for 5 minutes.
  4. Add black beans, diced tomatoes, vegetable broth, and spices.
