Yaki Udon is a delicious Japanese stir-fried noodle dish packed with flavor and simple to make.

- 400g udon noodles
- 2 tbsp vegetable oil
- 1 onion, sliced
- 1 carrot, julienned
- 1 bell pepper, sliced
- 200g cabbage, shredded
- 100g mushrooms, sliced
- 2 cloves garlic, minced
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tbsp mirin
- 1 tsp sugar
- Green onions, chopped (for garnish)
Instructions
- Cook udon noodles according to package instructions, then drain and rinse.
- Heat oil in a large pan or wok over medium-high heat.
- Add onion, carrot, bell pepper, cabbage, mushrooms, and garlic. Stir-fry for 3-4 minutes.
- Add cooked udon noodles to the pan.
- Mix soy sauce, oyster sauce, mirin, and sugar in a bowl, then pour over noodles.
- Toss everything together and stir-fry for another 2-3 minutes.
- Garnish with green onions before serving.

- Use fresh udon noodles for best texture.
- Adjust seasoning to your taste.
