Berry crumble bars are a delicious gluten-free dessert with a buttery crust and fruity filling.
Ingredients

- 2 cups gluten-free flour
- 1/2 cup sugar
- 1/2 tsp salt
- 1/2 cup cold butter, cubed
- 1 egg
- 2 cups mixed berries
- 1 tbsp lemon juice
- 1/4 cup sugar
- 1 tbsp cornstarch
Instructions
- Preheat oven to 350°F (175°C).
- Mix flour, sugar, and salt in a bowl.
- Cut in butter until crumbly.
- Press half the mixture into a greased 8×8 pan.
- Combine berries, lemon juice, sugar, and cornstarch.
- Spread berry mixture over crust.
- Sprinkle remaining crumb mixture on top.
- Bake for 35-40 minutes until golden.
- Cool before cutting into bars.

- Store in an airtight container for up to 3 days.
