Ingredients

- 2 medium beets, roasted and diced
- 1/2 cup walnuts, chopped
- 2 cups mixed greens
- 1/4 cup feta cheese, crumbled
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- Salt and pepper to taste
Instructions
- Roast the beets at 400°F for 45 minutes, then dice them.
- Toast the walnuts in a dry pan for 3-4 minutes.
- Combine the mixed greens, diced beets, and walnuts in a bowl.
- Drizzle with olive oil and balsamic vinegar.
- Sprinkle feta cheese on top.
- Season with salt and pepper.
- Toss gently before serving.
Notes
- You can substitute goat cheese for feta.
- Add orange slices for extra sweetness.
- Store leftovers in an airtight container for up to 2 days.
