- 2 cups cooked chicken, shredded
- 4 large flour tortillas
- 1 cup shredded cheddar cheese
- 1/2 cup BBQ sauce
- 1/4 cup diced red onion
- 2 tbsp chopped cilantro
- 1 tbsp butter or oil
Instructions
- Heat a large skillet over medium heat.
- Spread BBQ sauce on one side of each tortilla.
- Layer chicken, cheese, red onion, and cilantro on half of each tortilla.
- Fold the tortilla in half and press gently.
- Melt butter or oil in the skillet. Cook each quesadilla for 2-3 minutes per side until golden and cheese melts.
- Cut into wedges and serve hot.

- Use rotisserie chicken for faster prep.
- Adjust BBQ sauce to taste.
- Serve with sour cream or guacamole.
