- 1 3/4 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tbsp pumpkin pie spice
- 1/2 cup unsalted butter, melted
- 3/4 cup brown sugar
- 2 large eggs
- 1 cup pumpkin puree
- 1/4 cup milk
- 1 tsp vanilla extract
- For the streusel topping: 1/4 cup flour, 1/4 cup brown sugar, 1/2 tsp cinnamon, 2 tbsp cold butter
Instructions
- Preheat oven to 375°F. Line a muffin tin with liners.
- Whisk flour, baking soda, salt, and pumpkin pie spice in a bowl.
- In another bowl, mix melted butter and brown sugar. Add eggs, pumpkin puree, milk, and vanilla.
- Combine wet and dry ingredients until just mixed.
- Fill muffin cups 3/4 full.
- Make streusel by mixing flour, brown sugar, cinnamon, and cold butter until crumbly. Sprinkle over muffins.
- Bake 18-20 minutes or until a toothpick comes out clean.
- Cool in the pan for 5 minutes, then transfer to a rack.
Notes
- Use pure pumpkin puree, not pumpkin pie filling.
- Do not overmix the batter to keep muffins fluffy.
- Store in an airtight container for up to 3 days.
