- 4 large apples (such as Honeycrisp or Granny Smith)
- 1/2 cup rolled oats
- 1/4 cup chopped pecans
- 2 tbsp brown sugar
- 1 tsp ground cinnamon
- 1 tbsp melted butter
- 1/4 tsp vanilla extract
- 1/4 cup water (for baking dish)
Instructions
- Preheat your oven to 375°F (190°C).
- Core the apples, leaving the bottom intact to hold the filling.
- In a bowl, mix oats, pecans, brown sugar, cinnamon, melted butter, and vanilla.
- Spoon the filling into each apple, packing lightly.
- Place apples in a baking dish with 1/4 cup water.
- Bake for 30-35 minutes until apples are tender.
- Let cool slightly before serving.
Notes
- Use firm apples for best results.
- Adjust sugar to taste if apples are very sweet.
- Top with ice cream or whipped cream if desired.
