Description

Crispy on the outside, melty and cheesy on the inside, these baked broccoli cheese balls are perfect for snacks, parties, or healthy lunchbox additions.


Ingredients

Scale

2 cups broccoli florets, finely chopped

1 cup breadcrumbs

1 1/2 cups shredded cheddar cheese

1/3 cup Parmesan cheese, grated

1 large egg

1/2 teaspoon garlic powder

Salt and pepper, to taste

Cooking spray or olive oil for baking


Instructions

1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment.

2. Steam or microwave broccoli until tender; finely chop.

3. In a large bowl, combine all ingredients and mix well.

4. Roll mixture into 1-1.5 inch balls and place on baking sheet.

5. Lightly spray with oil and bake for 20–25 minutes, flipping halfway.

6. Let cool slightly before serving.

Notes

Make ahead and freeze for future snacks.

Use gluten-free breadcrumbs for a GF version.

Serve with ranch, garlic yogurt, or spicy mayo.
