Description

- 1 cup all-purpose flour
- 1/2 cup whole wheat flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp salt
- 1/2 cup pumpkin puree
- 1/4 cup vegetable oil
- 1/3 cup brown sugar
- 1 egg
- 1 tsp vanilla extract
- 1 cup diced apples
- 1/4 cup rolled oats
- 2 tbsp butter, melted
- 2 tbsp granulated sugar
Instructions
- Preheat your oven to 350°F and line a muffin tin with liners.
- In a bowl, mix flours, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, whisk pumpkin puree, oil, brown sugar, egg, and vanilla.
- Combine wet and dry ingredients. Fold in diced apples.
- Fill muffin cups 3/4 full with batter.
- Mix oats, melted butter, and sugar for the streusel topping. Sprinkle over muffins.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Cool before serving.
