- 200g digestive biscuits
- 100g unsalted butter, melted
- 500g cream cheese
- 150g caster sugar
- 2 large eggs
- 1 tsp vanilla extract
- 2 apples, peeled and diced
- 50g brown sugar
- 1 tsp cinnamon
- 50g plain flour
- 50g rolled oats
- 30g cold butter, cubed
Instructions
- Preheat oven to 160°C.
- Crush biscuits and mix with melted butter. Press into a lined tin.
- Beat cream cheese, caster sugar, eggs, and vanilla until smooth. Pour over the biscuit base.
- Toss apples with brown sugar and cinnamon. Scatter over cheesecake batter.
- Mix flour, oats, and cold butter to make crumble. Sprinkle on top.
- Bake for 45 minutes until set. Cool before serving.
