Description

Delicious apple cider whoopie pie cookies filled with rich caramel, perfect for fall treats.


Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1 large egg
  • 1/2 cup apple cider
  • 1 tsp vanilla extract
  • 1/2 cup caramel sauce for filling

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Whisk flour, baking soda, cinnamon, and salt in a bowl.
  3. Cream butter and brown sugar until fluffy. Beat in egg, apple cider, and vanilla.
  4. Gradually mix dry ingredients into wet until combined.
  5. Drop tablespoon-sized dough onto baking sheets, spacing 2 inches apart.
  6. Bake for 10-12 minutes until edges are golden. Cool completely.
  7. Spread caramel filling on flat side of half the cookies, then sandwich with remaining cookies.
