Ingredients

- 1 cup dried chickpeas (soaked overnight)
- 1 small onion, chopped
- 3 garlic cloves
- 1/2 cup fresh parsley
- 1/2 cup fresh cilantro
- 1 tsp cumin
- 1 tsp coriander
- 1/2 tsp baking soda
- 1 tbsp flour
- Salt to taste
- 2 tbsp olive oil
- 1/4 cup tahini
- 2 tbsp lemon juice
- 2 tbsp water
Instructions
- Drain soaked chickpeas and pat dry.
- Blend chickpeas, onion, garlic, parsley, cilantro, cumin, coriander, and salt in a food processor.
- Add baking soda and flour, then pulse to combine.
- Form mixture into small balls or patties.
- Brush with olive oil and air fry at 375°F for 12-15 minutes, flipping halfway.
- Mix tahini, lemon juice, and water to make the sauce.
- Serve falafel hot with tahini sauce.
Notes
- Soak chickpeas for at least 12 hours.
- Do not use canned chickpeas.
- Adjust spices to your taste.
- Store leftovers in an airtight container for up to 3 days.
