Description
Crispy, golden eggplant rounds made in the air fryer with a parmesan crust. A quick and healthy side dish or appetizer.

- 1 medium eggplant, sliced into 1/4-inch rounds
- 1/2 cup grated parmesan cheese
- 1/2 cup breadcrumbs
- 1 tsp garlic powder
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 egg, beaten
- 1 tbsp olive oil
Instructions
- Preheat air fryer to 375°F (190°C).
- In a bowl, mix parmesan, breadcrumbs, garlic powder, oregano, salt, and pepper.
- Dip each eggplant slice in beaten egg, then coat with the breadcrumb mixture.
- Lightly brush both sides of coated slices with olive oil.
- Place slices in a single layer in the air fryer basket, working in batches if needed.
- Cook for 8-10 minutes, flipping halfway, until golden and crispy.
- Serve warm with marinara sauce or your favorite dip.
Notes
- For extra crispiness, pat eggplant slices dry before coating.
- Panko breadcrumbs give a crunchier texture.
- Store leftovers in an airtight container for up to 2 days.
- Reheat in the air fryer for 2-3 minutes to restore crispness.
