- 1 lb large shrimp, peeled and deveined
- 1/2 cup shredded coconut
- 1/2 cup panko breadcrumbs
- 1/2 cup all-purpose flour
- 2 eggs, beaten
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup mayonnaise
- 1 tbsp lime juice
- 1 tsp chili sauce
Instructions
- Preheat air fryer to 375°F.
- Mix shredded coconut, panko, garlic powder, salt, and pepper in a bowl.
- Coat shrimp in flour, dip in beaten eggs, then press into coconut mixture.
- Place shrimp in the air fryer basket in a single layer.
- Cook for 8-10 minutes, flipping halfway, until golden and crispy.
- Mix mayonnaise, lime juice, and chili sauce for the dip.
- Serve hot with the dip.
Notes
- Pat shrimp dry before coating for better adhesion.
- Use unsweetened shredded coconut for a balanced flavor.
- Adjust chili sauce for more or less heat.
