A hearty and flavorful African-inspired sweet potato soup with warm spices and coconut milk.
Ingredients

- 2 large sweet potatoes, peeled and cubed
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tbsp ginger, grated
- 1 can (400ml) coconut milk
- 3 cups vegetable broth
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1/2 tsp cayenne pepper
- 2 tbsp peanut butter
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a pot over medium heat.
- Add onion, garlic, and ginger. Sauté until softened.
- Stir in sweet potatoes, cumin, paprika, and cayenne. Cook for 2 minutes.
- Pour in vegetable broth and bring to a boil.
- Reduce heat and simmer until sweet potatoes are tender (about 15 minutes).
- Add coconut milk and peanut butter. Blend until smooth.
- Season with salt and pepper. Serve garnished with cilantro.
Notes
- For extra protein, add chickpeas or shredded chicken.
- Adjust cayenne for desired spice level.
- Store leftovers in the fridge for up to 3 days.
